		<description>just season put garlic lime olive oil and extra stuff inside and put it on the grill...if u want to make sure, that everything stays inside sew the belly together. i wouldn't put it in tin foil, because if u do it that way u don't get the "grill flavor" just pay attention that u don't have to high temperature on the grill. and i wouldn't cut the head off either, in my eyes it looks much nice with head</description>

		<description>You don't need to cut the heads if you do not want to...some people even eat the meat off the heads too..or use them in soup.  (not I)   Anyway, I found the best way is to season just as you have and wrap them up in aluminum foil...like in an envelope.   That way nothing will fall through the grill into the fire and you still get the grill flavor.   Fish steaks, like swordfish or salmon steaks can go directly on the grill.  But fillets are best cooked wrapped, then they steam in their own juice and come out yummy.</description>
